Front of House Manager - Brading Roman Villa Trust

The Front of House (FOH) team at Brading Roman Villa is a vital component and the first point of contact for all visitors to the site. All three areas comprising of the museum reception, shop and coffee shop are where a “first impression” is created and therefore this must always be demonstrated with a high standard of customer service. The role of FOH Manager is to ensure that this service and the visitor experience is maintained. 

You will manage the FOH team of reception / retail assistants, FOH volunteers, chefs and catering assistants and will be responsible for the day-to-day running of reception/retail/catering operations and services. You will be required to monitor the quality of the food and service as it is important to achieve good quality within a budget whilst maintaining high standards of hygiene and customer satisfaction.

Responsibilities:

Designated Key Holder-

As a designated key holder you will be responsible (when rostered) for opening and closing the site and ensuring that all areas are ready for normal operational duties as well as being responsible for any H&S/Fire procedures if required.

Admin and Management

  • Keeping to budgets and maintaining financial and administrative records.
  • Ensuring staff are fully trained and understand protocols/procedures and are kept informed of any offers/events/exhibitions.
  • Organising staff/volunteer rotas to support the Office and Admin Manager.
  • Managing and lead event planning when the cafe/education room or museum reception is required for private functions/events/meetings.

Hygiene and Health and Safety

  • Monitoring the quality of the product and service provided.
  • Maintaining such records that are legally required (HACCAP) and keeping well informed of updates external agencies e.g. Food Standards Agency requirements and protocols/procedures.
  • Ensuring staff are fully trained and understand protocols/procedures and are kept informed of any updates to food handling, preparation storage, hygiene etc.
  • Ensuring that health and safety regulations are strictly observed, recorded and archived.

Retail

  • Managing retail shop stock and check that it is entered into the epos system correctly, any orders are logged, processed and checked on delivery and stock levels/stock takes are kept up to date.
  • Ensuring retail stock is relevant, KPIs monitored regularly and liaise with museum staff for specialist items relating to specific exhibitions/events.

Coffee Shop / Kitchen

  • Ensuring that health and safety regulations are strictly observed, recorded and archived. Understanding the need for, and helping to maintain, excellent hygiene procedures and all food hygiene and preparation and storage procedures are followed and recorded. 
  • In conjunction with the Office and Admin Manager, create and update policies and procedures by which the team must operate.
  • Ensuring adequate stock levels of supplies and consumables for café area, managing orders and stock rotation.
  • Planning menus in consultation with chefs to meet budget and financial requirements.
  • Creating offers and deals that will encourage repeat visits in the café.
  • Working alongside colleagues to market both the café and museum via various outlets including social media platforms.
  • Working with the kitchen team to develop a good knowledge of the products on offer to guide customers and to issue allergen advice as necessary.
  • Monitoring the quality of the product and service provided.

Essential Experience:

  • A minimum of two years’ experience of managing and supervising a team.
  • Flexible- able to work additional hours in the evenings/weekends or to cover holiday/sickness.
  • Competent understanding of Microsoft Office – Word and Excel
  • A good understanding and application of the Hazard Analysis and Critical Control Point (HACCP) food management system.
  • A good understanding of EPOS systems.
  • Experience of sourcing and purchasing products for the café and retail shop.
  • Experience of working in a customer facing role.
  • Regular reporting for senior management/board members.
  • Level 2 Food Hygiene Certificate- If not current then it must be updated when in post

Desired Experience:

  • Level 3 Food Safety Certificate- will be given as training whilst in post
  • Emergency First Aid at Work Certificate

Hours: Minimum 18 hours/3 days per week, Tuesday to Saturday. Must be able to also work flexible hours including occasional weekends, bank holidays, holiday/sickness cover and afterhours work with advance notice.

Salary: approx. £14,000 per annum
