Cafe Cook / Baker - Brading Roman Villa

The Front of House (FOH) and kitchen team at Brading Roman Villa is a vital component and the first point of contact for all visitors to the site. All three areas, comprising the museum reception, shop and cafe areas, are where a “first impression” is created and therefore this must always be demonstrated with a high standard of customer service.

The role of cook/baker is to ensure that this service and the visitor experience is maintained. You will be responsible for running the day-to-day catering operations and for monitoring the quality of the food and service. An important part of the role is achieving good quality within a budget and maintaining high standards of food preparation, hygiene and customer satisfaction.

Part time employment with a minimum 14 hours per week. Your working hours will typically start at 9.30 am and finish at approximately 4.30/5pm, Tuesday to Saturdays. You will be required to work additional hours to cover sickness and holidays. You may be required to work Sundays, some evenings and public holidays. 

You must be available for in-person interviews the week commencing 23rd September 2024. Employment commences 8th October 2024

Responsibilities

Hygiene and Health and Safety:

Monitoring the quality of the product and service provided.

Maintaining such records as are required by the FOH Manager and other external agencies e.g. Food Standards Agency etc.

Ensuring that health and safety regulations are strictly observed, recorded and archived.

Understanding the need to maintain excellent hygiene procedures, all food hygiene and preparation and storage procedures are followed and recorded.

Ensuring that any risk assessments are complied with.

Working within established guidelines and operating procedures.

Undertake training when required.

 Food and Menus:

Providing excellent customer service and greet visitors in a friendly, welcoming and confident manner.

Producing high quality food products and freshly prepared food, hot/cold drinks e.g coffees, hot chocolates and milkshakes.

Ensuring a freshly stocked availability of cakes and scones baked on the premises and replenished throughout the day/week.

Ensuring adequate stock levels of supplies and consumables for café area, managing orders and stock rotation.

Planning menus in consultation with the FOH Manager to meet budget and financial requirements.

Liaising with the FOH Manager for any special events or private bookings requiring food/drink.

Ensuring that alcohol is sold according to the Licensing Act 2003 and upholding the Think 25 policy.

Working with the kitchen team to develop a good knowledge of the products on offer to guide customers and to issue allergen advice as necessary.

Assisting in preparation of coffee shop, kitchen and counters before, during and at the end of service, including clearing and cleaning tables, washing up and stacking/emptying the dishwasher, putting away clean crockery, cutlery and equipment etc. clean and shut down the coffee machine on a daily basis as instructed, display (in the morning) or close down the food placed out on the counter tops and any other café duties if required and does not impact on your main responsibilities.

Other Duties:

Stepping into the role of café server/cover reception when staff numbers are low or during busy periods and food orders are not needed.

Attending scheduled staff meetings.

Processing coffee shop sales ensuring accurate use of the ICR system and card machines.

Handling customer complaints and reporting feedback to the Managers.

Reporting maintenance issues to the FOH Manager

Responsibility for security (product and cash), taking payments accurately and be vigilant for shoplifters and fraudulent credit cards etc.

Undertaking other related duties which may occasionally arise within the running of the coffee shop (for example: stock takes).

Qualifications / Training:

Level 2 Award in Food Allergy Awareness (Minimum requirement)

Current Level 2 Food Hygiene Certificate (Minimum requirement

Level 3 Food Safety Certificate

GCSE or equivalent in Maths and English

Emergency First Aid at Work Certificate

Experience:

A minimum of 2 years’ experience of running a café kitchen

Experience of high-quality baking.
